빠쿠테(Pak Koot Teh)

빠쿠테(Pak Koot Teh)

It originated in the late 19th century in southern China and was predominantly spread by maritime Chinese immigrants, including those who migrated to British-controlled territories like Hong Kong and Macau. They used pork bone and a variety of herbs and spices to create a special soup known for its warming and health benefits.

Malaysia and Singapore embraced and further developed Pak Koot Teh as Chinese immigrants settled in these regions. It adapted to the local tastes and ingredients, and it has now become one of the iconic traditional dishes of Malaysia and Singapore.

The name "Pak Koot Teh" is a combination of Chinese and Malay languages. "Pak" means pork in Chinese, while "Teh" means tea. Thus, it signifies a soup made with pork and tea.

Although Pak Koot Teh has Chinese culinary influences, it reflects the flavors and characteristics of the local cuisine. It has a unique taste and aroma. In Malaysia and Singapore, Pak Koot Teh is still beloved as a traditional dish enjoyed with family and friends.

Cooking steps-----

Rinse the pork bones, spare ribs, and pork belly thoroughly. You can also prepare other parts such as pork kidney or intestines, depending on your preference.

Pour water into a large pot and add the pork bones, spare ribs, and pork belly. Make sure the water covers the ingredients adequately. Also, add the packet of herbs and spices.

Add garlic, spring onions, and ginger to the pot. You can slice the garlic and ginger thinly or use minced garlic and ginger.

Adjust the heat to medium and let the soup simmer for approximately 1-2 hours. It takes time for the pork to become tender.

Once the soup is boiling, add chili powder, white pepper, and salt to adjust the taste. You can also add additional seasoning to enhance the flavor.

Adding carrots is optional but recommended. Carrots can be cooked along with the meat, adding more flavor and richness to the dish.

Serve the cooked Pak Koot Teh in a large bowl. Include the soup, meat, garlic, spring onions, and other desired ingredients.
